Date Pop Recipe

We all know excessive amounts of sugar is detrimental to our health. There are so many sweet things that the Lord has created to satisfy little sweet cravings now and then, and they all are just sweet naturally. There's all kinds of fruit, honey, stevia extract, and dried fruit - just to name a few. I tried a new recipe recently because I did  not want to always shell out so much cash just for healthy snacks. A food processor is the only kitchen appliance that is required to make this yummy treat.

Date Pops are a simple or as complex as you would like to make them. Now, be careful because dates do have alot of natural sugar (as any dried fruit does), but one or two now and then is enough to satisfy any sweet tooth! I received my food processor as a gift from my mother in law, and I am so glad I have one....mine is similar to this one. Now, if you don't have a food processor you might try using a blender, but that may be a bit difficult. There are many good quality food processors out there that won't break the bank. You could even shop around at thrift stores, garage sales, or Facebook resale pages to find a good one at a decent price.

So, pull out your food processor and let's get started!

The Ingredients for your base of any Date Pop are Dates and Almonds at a 1 to 1 ratio...literally, that's it. Now, you can make different combinations of Date Pops by adding Cacao, Protein Powder, Vanilla, Pumpkin Pie Spice, different dried fruits, different nuts, or any other ingredient you may like to try. The possibilities are truly endless. I wanted to share with you one of my favorite recipes I have found thus far.

Choco-Coco Protein Date Pops
Makes approximately 30 Pops

Ingredients:
1 cup raw almonds
1 cup soaked dates
1/4 cup unsweetened coconut, and 1/4 cup additional to coat outside
1/4 cup milled Chia and Flax seed mix
1/4 Collagen
3 Scoops of Protein Powder of choice
Optional 2 squares of 80% dark chocolate, slightly chopped

Now, that's my ingredient list, but you can do more or less of anything in order to get a firmer or sticker date ball. Also, if you don't have collagen or you would rather not add protein powder then you can omit or switch it up. Date Pops are so simple to make - you really can't mess it up! That's what is so fun about them...the combinations are endless

Preparation:
1. Soak your dates in warm water for 20 minutes. Drain before using them
2. Place Almonds in the Food processor first and pulse them until they are finely chopped (not a paste).
3. Add in Coconut, milled Chia and Flax seeds, Coconut flakes, Protein Powder, Dark Chocolate, Collagen and the Dates (after you have soaked and drained them).
4. Pulse until all of the ingredients form a slight ball.
5. Pull out small amount of the paste and roll it into small ball shapes, about a two inches wide.
6. Coat in chopped coconut flakes
7. Store in Fridge

There you have it! You made Coconut Pops for a fraction of the cost of those similar treats you might buy at the store! You could also make this recipe into Bars too if that's more your thing. You would just line a baking dish with parchment paper and press the finished product into the dish. Then cut the mass into even bars. Done.

The basic outline for making any Date Pop is the same.
Choose an equal amount of dried fruit and nuts. Choose your add - in ingredients.
Soak the dried fruit. Chop the chosen Nuts. Add in the rest of the ingredients and mix them all together.
You can use Cashews, Walnuts, Pumpkin Seeds, Cherries, Raisins, Dried Blueberries....think classic or outside of the box.

Have fun with it! May we feed our bodies and our families to the glory of the Lord. May God be glorified in our food prep, grocery shopping, and serving our family each day.
